Ingredients
- 220g banana
- 230g almond or cashew butter
- 50g Per4m Advanced Chocolate Brownie Batter flavour protein powder
- ½ tsp baking powder
- ½ tsp vanilla extract
- 20g unsweetened cocoa powder
To decorate:
- cake decorations festive sparkles or mini smarties
- writing icing (any bright colours)
Additional:
- Christmas tree shaped cookie cutter

Method
Preheat oven to 160˚C/325˚F. Line a large baking tray with baking paper.
Place the bananas in a mixing bowl. Mash well until really smooth.
Add the remaining ingredients and stir well to form a thick, smooth paste.
Transfer the mixture to the tray and spread gently with a spatula to form a large rectangle, just under 1cm thickness.
Bake for 25 minutes, or until firm.
Leave to cool on the tray.
Using your cookie cutter, cut out as many cookies as possible.
Cut any leftover cookie ‘offcuts’ into squares or rectangles.
Zig zag the writing icing over the trees to create a ‘tinsel’ effect.
Dot the sprinkles/balls around the tinsel for extra decoration, using the icing to glue them to the tree.
Turn the squares into Christmas gifts by adding an icing bow and ribbon.
Store any leftover cookies in an airtight container for up to 4 days.
