Ingredients
- 150g almond butter
- 2 tbsp cold water, plus more as needed
- 50g honey or maple syrup
- ¼ tsp fine salt
- 1 tsp vanilla extract
- 2–3 drops of peppermint extract
- 20g desiccated coconut
- 65g oats (use gluten-free if preferred), finely ground in a blender
- 70g Per4m Vanilla Flavour Plant-Based Protein Powder
- 30g dark chocolate, melted

Method
Line the base of a 15x15cm baking tin or a medium-sized loaf tin.
Place the almond butter, honey, vanilla extract, peppermint extract, salt, and water in a large bowl. Stir well until combined.
Add the ground oats and protein powder. Stir until combined.
Use your hands to mix together. Add around 1–2 tbsp cold water until a smooth dough forms.
Mix by hand until a smooth dough forms.
Transfer the dough to the tin. Press the dough firmly into the base of the tin. Flatten the surface evenly.
Refrigerate for 20 minutes, or until firm.
Slice into 10 bars.
Drizzle the melted chocolate over the bars. Refrigerate for 15 minutes, or until set.
Store any leftovers in an airtight container and refrigerate until set.
