Ingredients

  • 100g Per4m Advanced unflavoured protein powder
  • 35g plain flour (use gluten free if preferred)
  • 2 tsps ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp baking soda
  • ¼ tsp fine sea salt
  • 40g dark molasses
  • 10g honey
  • 70g smooth almond butter
  • 30g unsalted butter, melted
  • 1 tsp vanilla extract
  • 20ml milk of your choice

To decorate:

  • white or yellow writers icing
  • 36 mini smarties

Additional:

  • Gingerbread men cookie cutter

Method

Preheat oven to 175˚C/350˚F. Line two large baking trays with baking paper.  

Place the protein powder, flour, ground ginger, nutmeg, baking soda and salt in a mixing bowl and stir well. 

Add the remaining ingredients, except for the milk, and stir well to form a dough. 

Add half of the milk and stir well. If the dough is dry, add more milk, 1 tsp at a time and combine well. The dough should be slightly tacky but not too sticky. 

Place the dough on a large chopping board. If the dough sticks to the chopping board, add a very light dusting of flour.

Roll the dough until ½ - ¾cm thickness.

Cut the gingerbread men cookies out of the dough using your cutter. 

Place the cookie onto the baking trays, leaving a small gap between each one. 

Any leftover dough can be rolled again to create more cookies. 

Bake for 7-8- minutes, until golden. Keep an eye on them as they cook, as the edges can burn quite easily. 

Leave the cookies to cool on the baking trays. 

Decorate each cookie with the writers icing and mini smarties.
