Chocolate Chip Protein Cookies Recipe

Ingredients

  • 2 eggs
  • 80g smooth peanut butter
  • 1 tsp vanilla extract
  • 50g PER4M Advanced Whey Cookie Dough
  • 20g oats, finely ground (use gluten free if preferred)
  • ½ tsp baking soda
  • 25g milk or dark chocolate chips

Method

Preheat oven to 180˚C/350˚F. Line a large baking tray with baking paper.

Crack the eggs into a large mixing bowl. Add the peanut butter and vanilla extract. Stir well using a balloon whisk.

Add the remaining ingredients, except for the chocolate chips, and stir well until combined.

Stir in most of the chocolate chips, reserving around 1 tbsp for later.

Place a piece of cling film onto a chopping board. Place the cookie mixture onto the cling film.

Wrap the mixture in the cling film then roll into a long sausage shape.

Unwrap the mixture. Using an ice cream scoop as a measure, scoop up some of the mixture and place it onto the baking tray. Flatten with a spatula and shape into a cookie shape.

Repeat until all of the mixture is used up.

Press the remaining chocolate chips into the surface of each cookie.

Bake for 8-10 minutes, or until firm in the centre.

Transfer to a wire rack to cool. Serve.

Store any leftovers in an airtight container for up to 4 days.
