Ingredients
- 30g coconut oil, melted
- 70g desiccated coconut
- 45g Per4m coconut creme protein powder
- 1 tbsp unsweetened cocoa powder
- 100g dark chocolate chips
To coat:
- 10g desiccated coconut
Makes 9 Energy Balls
Method
Place the ingredients in a bowl, except for the chocolate chips. Mash well with a fork until the mixture forms a dough. Add a drop of cold water if the mixture is too dry
Freeze for 1 hour or until the mixture is firm.
Roll into 9 balls.
To melt the chocolate, place the chocolate chips in a heatproof bowl and stand in a shallow basin of boiling water. Melt over a medium flame, stirring frequently until melted.
Carefully remove the bowl from the heat and leave to stand for several minutes.
Dip each energy ball in the chocolate.
Sprinkle the remaining coconut over the top. Freeze for 10 minutes, or until set. Serve.
Refrigerate for up to one week or freeze for up to two weeks.
